HOP Faculty Featured in Three News Segments

cardel v2In December, Michelle Cardel, Ph.D., R.D., assistant professor in the Department of Health Outcomes & Policy, was featured on three separate occasions on the TV news station, Fox 35 News Orlando. In these segments, she discusses how to get kids to eat their veggies, what holiday leftovers are safe to save and for how long, and what the actual calorie count is for assorted alcoholic drinks.

In “Getting Your Kids to Eat Veggies”, Cardel tackles the tricky job of introducing vegetables to children by offering helpful tips and tactics. One such way is to put out a plate of vegetables as an appetizer when children are most hungry and willing to eat just about anything. To learn more, watch “Getting Your Kids to Eat Veggies”.

If you’ve ever wondered how long you can keep leftover turkey in the refrigerator, you’ll probably want to watch “Leftovers: What to Keep, What to Toss”. In this segment Cardel reviews the refrigerator shelf-life of holiday must-haves, such as turkey and ham (3-4 days), casseroles and potatoes (3-5 days), cranberry sauce (up to 14 days), eggnog (only 24 hours), and wine (3-5 days). She adds that these foods all freeze well and can be kept much longer that way.

For those trying to keep track of their calories, watch the video “Alcohol Calorie Count”. Cardel shows how to keep your calories in check by paying attention to portion sizes for drinks such as wine, beer, champagne, and liquor.
